Pumpkin Chocolate Chip Bread


  • 2 cups flour
  • 1 T baking powder
  • ¼ tsp salt
  • ¾ cup sugar
  • 1.5 tsp pumpkin pie spice 
  • 1/2 cup pumpkin puree
  • 1 cup non-dairy milk
  • 1 T oil
  • ½  tsp vanilla extract
  • chocolate chips


  1. Preheat the oven to 350 and spray a baking pan with cooking spray
  2. In a large bowl combine flour, baking powder, salt, sugar, and pumpkin pie spice
  3. In a small bowl whisk together pumpkin puree, non-dairy milk, oil, and vanilla extract
  4. Pour in the wet ingredients into the dry ingredients and mix until just combined
  5. Fold in chocolate chips
  6. Pour the batter into sprayed baking pan and bake in oven for 25-40 minutes depending on pan size
  7. To check if it is done insert a toothpick and it should come back mostly clean
  8. Wait for it to cool then serve
