Protein Burrito

Ingredients

  • Quinoa Rice:
  • 1/4 cup rice
  • 1/4 cup quinoa
  • 1 cup water
  • 1/4 tsp salt
  • Sauteed vegetables:
  • 1 tsp oil
  • 2 cloves garlic
  • 1/3 onion diced
  • 1/2 cup chopped pepper 
  • 3/4 cup corn
  • 2 cups chopped kale
  • 1/8 tsp salt
  • Pinch cayenne pepper
  • Pinch coriander
  • Pinch cumin
  • Burrito:
  • Black beans
  • Tortilla
  • Guacamole:
  • 1/2 avocado
  • 1/3 cup salsa
  • Pinch of salt
  • Juice of lime wedge 

Instructions

  1. In a small pot combine the rice, quinoa, and water and cook on medium heat for 15-20 minutes
  2. In a nonstick pan add oil and garlic and onion, cook for 3-5 minutes on medium
  3. Add bell pepper, corn and kale, saute until vegetables are tender
  4. Stir in salt, cayenne pepper, coriander, and cumin
  5. Remove pan from heat
  6. Assemble burrito by layering rice mixture, veggies, and beans in a tortilla.
  7. Cook assembled burritos in a nonstick pan with a little oil until golden brown on both sides
  8. Meanwhile, mash avocado in a small bowl, mix in salsa and season with salt and lime
  9. Serve hot
