
Ingredients
- Quinoa Rice:
- 1/4 cup rice
- 1/4 cup quinoa
- 1 cup water
- 1/4 tsp salt
- Sauteed vegetables:
- 1 tsp oil
- 2 cloves garlic
- 1/3 onion diced
- 1/2 cup chopped pepper
- 3/4 cup corn
- 2 cups chopped kale
- 1/8 tsp salt
- Pinch cayenne pepper
- Pinch coriander
- Pinch cumin
- Burrito:
- Black beans
- Tortilla
- Guacamole:
- 1/2 avocado
- 1/3 cup salsa
- Pinch of salt
- Juice of lime wedge
Instructions
- In a small pot combine the rice, quinoa, and water and cook on medium heat for 15-20 minutes
- In a nonstick pan add oil and garlic and onion, cook for 3-5 minutes on medium
- Add bell pepper, corn and kale, saute until vegetables are tender
- Stir in salt, cayenne pepper, coriander, and cumin
- Remove pan from heat
- Assemble burrito by layering rice mixture, veggies, and beans in a tortilla.
- Cook assembled burritos in a nonstick pan with a little oil until golden brown on both sides
- Meanwhile, mash avocado in a small bowl, mix in salsa and season with salt and lime
- Serve hot
