Oatmeal Raisin Cookies

Ingredients

  • ½ cup vegan butter
  • ½ cup brown sugar
  • ½ cup white sugar
  • 2 tablespoons non-dairy milk
  • ½ teaspoon vanilla extract
  • 1 cup flour
  • ¾  cup oats
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 tsp cinnamon
  • Pinch salt
  • Raisins

Instructions

  1. Preheat oven to 350 and spray a baking sheet with cooking spray.
  2. In a stand mixer with the paddle attachment, or bowl using a hand mixer, cream the vegan butter.
  3. Add the white, and brown sugar into the butter and cream together.
  4. Cream in the non-dairy milk and vanilla until combined.
  5. Add in the flour, oats, baking powder, baking soda, cinnamon, and salt.
  6. Mix until it forms a dough, then fold in the raisins.
  7. Roll into 1 inch balls for big cookies and 1/2 inch ball for small cookies.
  8. Place cookies onto baking sheet and bake in oven for 10-14 minutes
