Blueberry Muffins


  • 2 cups Flour
  • ½ Cup Sugar
  • 2 ½ tsp Baking powder
  • ½ tsp Cinnamon
  • A Pinch of Salt
  • 2 tsp baking soda
  • 2 Tablespoon vinegar
  • 1 cup Non-Dairy Milk
  • 2 Tablespoons oil
  • 1 tsp Vanilla extract
  • Blueberries


  1. Preheat oven to 350 and spray a muffin tin making sure to get the sides and bottoms
  2. In a large bowl combine flour, sugar, baking powder, cinnamon and salt
  3. In a small bowl mix baking soda and vinegar together.
  4. Add the non-dairy milk, oil, vanilla extract, and vinegar mixture into the dry ingredients.
  5. Mix until just combined then carefully fold in blueberries
  6. Add batter to muffin tin and put in preheated oven
  7. Bake for 20-30 minutes or until a toothpick inserted comes out clean
